Stéphane Cyran

The Côtes de Toul is a small, lesser-known grape-growing region located in Lorraine, tucked between Champagne and Alsace. Stéphane Cyran is one of less than a handful of natural vignerons farming vineyards and making wine there. His 3ha of vines are planted on dense red clay soils along a north-south escarpment in not too dissimilar growing conditions to southern Jura or Bugey.
In the cellar Stéphane is very hands off, making wines without additions—since his very first vintage in 2016. Vinification is done in mostly whole clusters and macerations occur in tanks before the wine either stays there or is transferred to old barrels for aging. Stéphane’s sparkling and red wines are truly unique; there is something very powerful about the density and substance to the wines even in their youth. You can taste a true sense of Lorraine’s terroir, one that we are very excited about exploring in more depth in the near future.
