Gemini vintner Simon Amber came at winemaking from the fruit rather than the glass. With a background in cheese-making, Simon has always had a keen interest in the organic processes of farming and wild fermentation. This interest was nurtured through his years working with the legendary Tim and Monique of Manon Farm in the Adelaide Hills.

Now working part time at Manon, and part time on Gemini, Simmo is presenting some of the most energetic and nourishing wines in Australia. With his first vintage in 2017, he’s had plenty of time to refine his practice in both his farming and vinification. As a purist, Simmo reflects ‘To say I practice minimal intervention is an understatement, as I always attempt to steer my ferments with the lightest touch possible. I would rather my wines do the talking, not me.’ Let’s listen to the wines.

The wines he makes under the Gemini label are clean, complex, light and incredibly drinkable. We can't imagine someone trying these wines and not wanting to come back for more.
